食堂炒菜技巧

食堂炒菜又名大锅菜,可以用多种烹制方法成菜,但其中使用最多的是炒,下面就大锅菜的烹制方法及其注意事项作简要介绍:

1、炒大锅荤菜:如回锅肉,盐煎肉,葱爆羊肉等,炒这类菜时,应将主料事先用精炼油拌匀,以防原料下锅后相互粘连,辅料应选含水量较少,吸油性较大的原料,如青椒、蒜苗;

2、炒大锅素菜:炒含水量较高的绿叶类蔬菜,如菠菜,空心菜,韭菜等,炒这类菜时火力要旺,油温要高,原料下锅后要快速翻动,以使之受热均匀且快速成熟。
