咸鲤鱼腌制方法

1、材料:活鲤鱼1条(2公斤左右)。调料:香油、料酒各50克,葱段25克,姜块、花椒各25克,盐16克,味精10克。

2、在鲤鱼两胸鳍间刺一刀放血,去鳃刮鳞,从脊部开膛取出内脏后洗净然后用花椒、料酒、盐、味精、姜(拍松)、葱腌两天。

3、用铁丝串住鱼尾,把腌好的鱼挂在荫晾处风干,约需1个月左右即可。
