醋溜蟹

1、用料:蟹600克,姜丝2汤匙,葱4条切丝,蒜蓉1茶匙,大鸡蛋1只。调味:浙醋3汤匙,糖21/2汤匙,老抽1汤匙,盐1/4茶匙,水3汤匙。芡:生粉3/4茶匙,水2汤匙。

2、鸡蛋加生粉11/2汤匙,拌匀成蛋糊。

3、蟹宰后洗净斩件,沥干水,洒下少许胡椒粉。

4、烧热平底镬或吕式镬,放下适量之油烧滚。

5、将蛋糊倒入蟹内拌匀,蟹放入滚油中,炸熟捞起。

6、锅中下油2汤匙,下姜丝、蒜蓉爆香,下调味,放入蟹炒匀,煮约1分钟,下葱炒匀,埋芡上碟。
