1、面粉发酵过度可以弥补,面粉变酸可以适当加一点小苏打中和酸味,但如果严重发酵过度面团的面筋弹性都会受影响,还必须加一些面粉重新和成面团;

2、如果因为面粉发酵时间过长,而导致有大肠杆菌和其它毒素得滋生,这样就不能食用了;

3、适量加一点食用碱或小苏打液,能有效消除酸味和减轻酒味。
