手抓饼和面配方

手抓饼制作方法:面粉1000克、盐10-15克、泡多源5-10克、五香粉10克、葱花50克、猪油或起酥油25克、开水400克、凉水150克。工艺:500克面粉与泡多源干拌均匀。盐加入开水溶解,再浇入另外500克面粉。然后将两种面粉搅拌到一起,加入凉水揉成面团,发酵20-50分钟,降温辅工滇继鄄荒殿维东哩后揪成长条,擀成长面皮,面皮刷猪油后撒上五香粉、葱花,再多层叠到一起,拧几圈,静止10分钟后轧成圆饼,烙熟后中间切一刀,甩松散即可。
