1、制取方法是:用砂锅装上特制米水,置在50℃左右的温度条件下(如用炕火烤煨等)使其发酵为酸水。

2、用料:(5人份)。

净鱼片500克,水发毛肚、水发海带各250克,午餐肉、豆腐皮各200克,黄豆芽、平菇各150克,大白菜100克。

调料:酸汤2500克,猪油150克,葱节、姜片各50克,毛辣果15克,糟辣椒20克,盐5克,味精8克,胡椒粉5克,料酒30克,醪糟汁50克。
