鸡卷的正宗做法

1、主料:油皮(120克)番茄(100克)冬笋(150克)荸荠(120克)籼米粉(干、细)(100克)。辅料:小麦面粉(25克)花生仁(生)(25克)香菇(干)(5克)木耳(干)(3克)淀粉(蚕豆)(10克)。调料:胡椒粉(1克)白酱油(15克)白砂糖(10克)醋(15克)味精(2克)花生油(40克)芝麻酱(7克)

2、兴化米粉入沸水中氽一下捞出,放在盆里,倒入干淀粉揉成粉泥;然后将花生、净荸荠、净冬笋、水发香菇剁成米粒大;

3、将以上各料与兴华米粉泥搅拌,加入味精、白酱油、芝麻酱,揉成馅料;水发黑木耳洗净;番茄洗净,切片;

4、白糖、白酱油、醋、胡椒粉、湿淀粉、味精调匀成卤汁;将每张豆腐皮摊平,上铺馅料,卷紧成圆棍状,用面粉调成糊封口;

5、待封口干后,每卷切成2.4厘米宽的斜块成鸡卷生坯;炒锅置旺火,下入花生油,烧至八成热,将鸡卷生坯下锅,炸至两面呈金黄色时,滗去油;

6、锅回旺火,放入黑木耳、番茄片稍炒,倒入卤汁勾芡,颠翻均匀,装盘即成。
