室温24摄氏度条件下面包需发酵两小时左右可达到理想状态,面包的发酵分两个阶段进行。第一阶段小发酵,将面粉数量的三分之一,加清水500克左右,再放入鲜酵母揉匀,静置发酵2小时,发起后即为小酵面。第二次发酵为后发酵,在室温20摄氏度至30摄氏度的情况下,将经过发小酵的面团静置15分钟,面团发酵完毕,即可进入烤箱烘烤。
