焖酥小带鱼的正宗做法

材料:带鱼两条、葱两棵、姜50克、米酒400毫升、糖三勺、盐三勺、醋两勺、老抽30毫升、食用油500毫升、清水400毫升、香叶适量、八角适量;

步骤:

带鱼洗净去除内脏和头尾后切成段,葱姜切成葱段和姜片,带鱼放进盆里,倒米酒葱段和姜片腌制约五分钟,去除腥味;锅热后倒入半锅油,油7分热后放入带鱼段炸透,捞出备用;将热油倒出后,锅内留少许油,放八角和香叶炒香;再倒入清水、糖、醋、盐、老抽和少量米酒煮沸;将腌制带鱼的葱姜铺在高压锅最底层,带鱼铺在葱姜上,把煮沸的汤汁倒入高压锅内,盖上锅盖小火炖压30分钟即可。
