重庆火锅锅底准备食材清汤1500克,牛油250克,豆瓣150克,豆豉100克,冰糖15克,辣椒节50克,姜末50克,花椒10克,精盐15克,料酒30克,醪糟汁100克。重庆火锅锅底具体调制方法是:

1、 先将炒锅置旺火上,下油(牛油或菜油等)烧热后,加豆瓣、姜片(老姜拍破)豆豉,煸出香味并呈红色,之后下汤。
