低筋面粉做包子、馒头、面包等是需要加酵母。做蛋糕,松糕,饼干不需要加入酵母。低筋面粉是指蛋白质含量在百分之6、5到8、5之间,颜色较白,用手抓易成团,蛋白质含量低,麸质也较少,因此筋性亦弱的面粉,比较适合用来做蛋糕、松糕、饼干以及挞皮等需要蓬松酥脆口感的西点。如果是以上的糕点则无需加酵母,如果用低筋面粉做包子、馒头、面包等是需要加酵母的,但是做包子、馒头、面包等建议用中筋面粉和高筋面粉。
