鲜羊肉如何腌制是用来做火锅的

鲜羊肉腌制方法:

1、原料整理:先将大块羊肉切成长约50厘米、宽13厘米、重约1千克的条状。

2、干腌:将硝酸钠和盐2、5千克混匀,用手擦涂于条肉的周围,平摆于缸内腌3天。

3、湿腌:取出后用干布擦去肉上的水渍,再用剩下的盐2、5千克制成卤液,将肉湿腌15天,卤液要浸没腌肉,每5天翻缸1次,取出沥干,即为成品。
