羊肉卷做汤怎样去膻味

做法如下:

1、萝卜去膻法将白萝卜戳上几个洞,放入冷水中和羊肉同煮,滚开后将羊肉捞出,再单独烹调,即可去除膻味;

2、米醋去膻法将羊肉切块放入水中,加点米醋,待煮沸后捞出羊肉,再继续烹调,也可去除羊肉膻味;

3、浸泡除膻法将羊肉用冷水浸泡2至3天,每天换水2次,使羊肉肌浆蛋白中的氨类物质浸出,也可减少羊肉膻味;

4、桔皮去膻法炖羊肉时,在锅里放入几个干桔皮,煮沸一段时间后捞出弃之,再放入几个干桔皮继续烹煮,也可去除羊肉膻味;
