香煎松茸

1、材料:姬松茸30克,面粉70克,黄油10克,鸡蛋黄1个,盐1茶匙(5克),料酒2茶匙(10ml),生菜2片,紫甘蓝2片,蛋黄酱2汤匙(30ml),柠檬汁1汤匙(15ml),芝士粉和辣椒末少许。

2、将姬松茸用温水浸泡30分钟,充分泡发后洗净。切掉根部,并将姬松茸切成两半,用盐和料酒腌制5分钟。

3、生菜和紫甘蓝洗净切丝放入大碗中,放入蛋黄酱,挤入柠檬汁搅拌均匀。

4、面粉中加入蛋黄和水调成糊,黄油隔热水融化,稍冷却后倒入面糊中搅拌至面糊呈微流动状即可,把姬松茸片沾上面糊。

5、平底锅中放入黄油,用小火将黄油融化后,调成中火,将姬松茸一片片夹入锅中煎至双面金黄。

6、将拌好的蔬菜铺在盘底,把煎好的姬松茸码在上面,撒上辣椒末和芝士粉即可食用。
