蔓越莓曲奇饼干松化黄油要打发吗

做蔓越莓曲奇饼干时黄油必须打发,原因为黄油打发以后包裹了大量的空气,烘烤的时候气泡受热膨胀,饼干才会酥松,所以必须打发。

具体做法:

用料:黄油300克、低筋面粉350克、糖粉200克、蛋黄1个、蔓越莓90克、鸡蛋1个;

步骤:

1、黄油室温软化,用筷子戳洞,蔓越莓用温水泡软后沥干,低筋面粉过筛;

2、加入全部糖粉,手动搅拌,防止打发黄油时糖粉飞溅;

3、黄油打发至体积变大,颜色变白, 呈羽毛细絮状态;

4、加入蛋黄,搅拌均匀后再加入鸡蛋;

5、加入已泡软的蔓越莓,搅拌均匀;

6、加入已经过筛的低筋面粉,搅拌均匀;

7、在饼干模具里面铺一层保鲜膜;

8、把曲奇面糊装进模具里,用保鲜纸包裹;

9、放入冰箱冷藏层里冷冻;

10、烤箱预热185度,将面糊取出,切成大约0.5厘米厚的片状;

11、放入烤箱中,烤箱调至170度,烘烤至金黄色即可。
