鲫鱼汤煮营养高还是蒸营养好

煲汤比较好。煲汤降火,特别是放鱼腥草来煲。在锅里放一点油加热,把去鳞去内脏去腮的鲫鱼煎一下,不会那么腥又可口,也不会煮烂。然后放开水和洗好的鱼腥草煲十五分钟即可。蒸鱼比较浪费鲫鱼的降火功效,而且鲫鱼煲汤确实比鲤鱼等别的鱼好喝。鲫鱼豆腐汤:鲫鱼开膛去内脏,去鳞去鳃(鱼档工作人员完成),洗净,抹干,用盐和料酒稍腌待用。豆腐切成1厘米厚的块。砂锅烧热,放入少量油,将鲫鱼放入,煎至两面呈金黄色。加入葱姜。加入足够开水(5碗左右)。加盖,烧开后转小火煲40分钟。加入豆腐,再煮5分钟左右,加盐和胡椒、鸡精调味即可。杂豆鲫鱼汤:将鲫鱼开膛、去鳃、去除内脏,洗净待用。黑豆、花生、红芸豆用水清洗干净待用。在砂锅中放入足够多的清水(12小碗左右),将鲫鱼、黑豆、花生、红芸豆放入,大火烧开。转小火,煲2-3小时,加盐调味即可。
