牛排锤也叫松肉锤,是用来锤松肉质纤维,让肉排的口感更松软嫩滑,腌制的时候更容易入味。锤的方法是,将整块肉排的两面都用牛排锤均匀敲打,不需要过度用力的,有肉筋的地方再额外敲几下,其他的像猪排、鸡排都可以用这种方法,处理肉排都建议用牛排锤,如果打算切牛柳,锤松了也更容易切,即使是冰冻的牛排,解冻後也要用牛排锤锤松,再腌制,不锤松的肉排,口感会韧硬,腌制的汁料也很难入味。
