馒头由面粉制成,面粉的主要成分是淀粉,淀粉经发酵会生成葡萄糖,葡萄糖经糖酵解会生成丙酮酸。丙酮酸无氧反应可生成乙醇和二氧化碳或乳酸等有机酸。二氧化碳与空气中水分可生成碳酸。所以馒头发酵的产物主要为乳酸等有机酸,其次为碳酸。
