1、鸡蛋蛋液中含有大量的蛋白质,向蛋液中加入食盐等高浓度中性盐时,会破坏蛋白质的胶体性质,使蛋液中的蛋白质的溶解度降低而从蛋液中析出凝固,这种过程叫做叫做盐析。

2、盐析的原理:高浓度中性盐破坏了蛋白质在水中存在的两个因素水化层和电荷,从而使蛋白质沉淀。
