炸带鱼主要掌握挂芡,火候以及翻动。

1、三种调料去腥入味:

带鱼治净后,稍微将水晾晾干,然后用料酒、少许盐、适量花椒粒(加花椒粒而非花椒面,花椒粒有很好的增香效果)腌制一个小时,提前入味;

2、调挂蛋糊不易太稠:

蛋清和粉面按照1比1的比例调成蛋糊(蛋糊调稀一些,鱼身能够挂住即可);

3、鱼身完整切莫早翻:

待油温6成热,开始冒青烟,将裹好蛋糊的带鱼轻轻滑入锅内,多放一点油,鱼入锅后不要急于翻身,煎至两面金黄出锅即可。
