焖:焖是从烧演变而来的,焖菜的主料经油炸后,再放适量的汤和调料盖严锅盖,用小火将主将焖烂,焖有红焖和黄焖,二者的烹调方法和用料都一样,只是调料有所差别,红焖所用酱油和糖色比黄焖多,红焖菜为深红色,黄焖菜呈浅黄。
