如何制作不酸的白糖糕

一、制作原料:粘米粉,澄面粉,清水,蛋白,白糖,温开水,干酵母。

二、制作方法:

1、将干酵母及糖用温开水浸至溶解,加入粘米粉半杯拌匀后,用渡毛巾盖好,在室温下放五到六小时,待发起到比原来体积大两到三倍;

2、将粘米粉及澄面粉用清水二杯调匀,静置至清水与湿粉分隔,将上层的水滤去;

3、白糖加清水二杯煮溶,加入蛋白拌匀,滤清,逐次少量倒入粉料中搅匀,盖密待发数小时;

4、拌入糕种搓次,用浊布盖盘口,静置十二小时发至呈细泡状;

5、将白糖浆倨入已铺蒸糕酆之蒸笼内,隔水大火蒸二十五分钟;

6、倒出稍冷片刻,切件即可。
