木炭烤鸡的腌制方法和配料

1、把清远鸡的血水冲洗净,待捞出来搌干水分后,纳盆并加入八角、桂皮、陈皮、香叶和盐,在拌匀腌渍5小时以后,再往鸡身表面刷上脆皮水(用大红浙醋、麦芽糖和白醋调制而成),随后将其挂起来并用风扇吹干表皮。

2、把果木放进烤炉,烧至无烟时才放入风干的清远鸡,烤约25分钟——至鸡皮酥脆且肉熟时,取出来拆掉大骨,最后斩成小块便可装盘上桌。
