1、原料:花蛤10个、鸡蛋2个、葱花适量。调味料:盐、湿淀粉、油(少许)、料酒。花蛤洗净,放入开水锅(水中放一点料酒)焯至壳开,在煮花蛤的水中晃动漂去杂质,花蛤入另一碗中。煮花蛤的汤倒入汤碗中,让汤沉淀一下。

2、鸡蛋液、湿淀粉、盐打散,将沉淀过的煮花蛤的汤倒入蛋液中(倒的时候要慢点,别将沉淀的杂质也倒入)划匀,先撒少许葱花,淋一点油,上蒸锅蒸至6-7成熟(也就是说,最上面的蛋液还没凝结),这时将花蛤码入蛋液中,再继续蒸熟。最后撒入剩下的葱花即可上桌。
