蒸的馒头不松软的原因有酵母添加过少或溶解酵母的水,其水温未控制在30度左右。

蒸馒头注意事项:

面粉和酵母的比例,500克面粉加入6克酵母左右;和面时面粉加入酵母粉,拌匀后用温度30度左右的温水,慢慢加入,面团要稍微硬些,用力反复揉,直到表面光滑;保温时用棉被盖严,如果面团温度低可加一个暖水袋或暖手宝,等待2至3小时即可拿出面团;揉好面团,待水开后上锅蒸,大火15分钟后,掀开盖,用手拍拍馒头表面,外皮不粘手即证明面团已经熟透。
