蒸糟鱼的做法详细步骤

1、鲤鱼2500克,江米酒1000克,花椒10克,白砂糖150克,大曲酒150克,盐300克,猪油(炼制)125克。

2、将鲤鱼洗净,从背部剖开去掉内脏,剁成长6厘米、宽6厘米的方块,盛入大瓦钵中,加入精盐、花椒拌匀腌3天;

3、去掉花椒,用净布揩去鱼块上的水分,放在通风处晾两天,达七成干即可;

4、将鱼块与甜酒糟、白糖、曲酒拌匀,装入密封的坛内,腌10天,即成糟鱼(在坛内密封的时间越长味越香);

5、使用时从坛内取出糟鱼(每块均粘附酒糟),盛入碗中,淋入适量的熟猪油(每500克糟鱼淋熟油25克),上笼蒸熟即可。
