1、蒸鱼的温度讲究的就是,用水蒸气最强的热力,将鱼肉在最短时间内蒸熟,因此应当等水烧开后再将鱼放入蒸,做蒸肉或者是蒸鱼的菜肴时,一定要等到蒸锅中的水烧开之后再入锅,因为高温会迅速使肉或鱼肉收缩,鲜味不会外流,蒸熟后味道会更加鲜美。

2、蒸鱼最好控制在十五分钟以内,想要鱼蒸熟的快,还要掌握一些小窍门:建议在鱼身下面架两根筷子,离开盘底,鱼全身可更快的熟。还可以在鱼的背部划几刀,这样更加容易熟。
