扯面和面加盐可使和出来的面相对更具劲道。和面的实质是一种结晶过程,形成含水结晶体,并随着不断地单向揉搓使晶体方向逐步趋于一致。具体原理:

使面团有劲道的主要物质是麦胶蛋白和麦谷蛋白,这两种蛋白质就是面筋的主要成份。和面时加入的少量食盐溶入水,形成电解质溶液。当面粉中的这两种蛋白质遇到电解质时发生凝结,形成蛋白胶,从而增强了面团的筋力。
