耐高糖酵母与普通酵母区别

1、耐高糖的酵母粉对糖的耐受度能达到30%,做面包类基本上都是用耐高糖酵母,即便是不放糖或是微量放糖的面包,比如硬包、法棍类由于配方中有较多的盐分,更要使用耐高糖酵母。

2、普通酵母对糖的耐受度在7%左右,如果糖的量超过7%就会抑制发酵,糖量更高甚至会发酵不起来。普通的酵母粉适合制作无糖或者低糖的发面面食,比如馒头、包子、全麦面包等等。
