干煎刨盐鱼怎么做

1、原料,草鱼1条(约1.5千克)。调料,A料(姜,蒜米各5克,豆豉10克,红尖椒8克,蚝油5克,五花肉丁,高汤各50克),B料(盐,味精,胡椒粉,糖各2克),葱花5克,刨盐50克,香油3克,猪油500克(实耗50克)。

2、草鱼宰杀干净,去头尾和脊骨,在鱼肉上用牙签插洞,然后剞一字花刀,用刨盐摸匀鱼身,腌24小时左右。

3、抖去鱼身上的香料,锅上火,放入猪油500克烧至五成热,下入腌好的鱼炸至微黄出锅。

4、另起锅上火,倒入猪油30克烧至三成热,下入A料爆香,放入鱼,倒入B料煨制,至汤汁自然收干,淋香油,撒葱花即可。
