醉蟹焖鸡

1、材料:活老母鸡一只750克,醉蟹150克,熟火腿片25克,水发香菇15克,笋片25克,绍酒40克,葱25克,姜25克,精盐7.5克。

2、将鸡宰杀治净,连同肫、肝、心一起放入沸水锅中略烫。

3、捞出洗净,放入垫有竹箅的砂锅内(鸡腹朝上),加清水淹没鸡身。

4、加入绍酒、葱姜,取一平盘压住鸡身,盖上钵盖。

5、砂锅上火烧沸,撇去浮沫,移微火焖3小时至酥烂,取出平盘和竹箅,拣去葱姜,将腕、肝、心分别切成片。

6、鸡腹朝上,放入醉蟹和醉蟹卤,砂锅再上火烧沸,撇去浮沫,加入精盐,将火腿片、冬菇片、笋片及肫肝、心片铺在鸡身上,上中火烧沸即成。
