煮肉是冷水下锅还是开水下锅

1、煮肉要热水下锅。用热水煮肉,可以使肉块表面的蛋白质迅速凝固,肉内的营养物质不易渗入到汤中,炖出来的肉特别鲜美、松软、滑嫩。而冷水下锅会造成肉质遇冷紧缩发硬,肉煮出来就会又老又硬了。另外,在炖肉的中途需要加水需要加热水,加冷水会让肉变硬。

2、如果煮汤,就冷水下锅,用开中火慢炖,这样可以让肉在加热的过程中使营养物质逐渐溢出来,使汤更鲜美好喝。
