潮汕肠粉酱汁的做法

1、大蒜、香菇分别剁成蓉,葱切成葱花。保证香菇蓉的量是蒜蓉的二分之一左右,葱花是香菇蓉的二分之一左右。(蒜蓉:香菇蓉:葱花=4:2:1)

2、冷锅下油小火,下蒜蓉、葱花,煸炒出香味后,把蒜葱蓉往锅边推,另一边下香菇蓉,炒至出香味后三者混合炒。切记小火小火,不然很容易糊。

3、下生抽蚝油,自己感受量哈哈。炒至香味加入热水、鸡精、盐(水的量取决于肠粉量)。煮开后尝咸淡,咸了加点水。淡了加多点生抽,根据个人口味调整。

4、少许水加水淀粉融化后倒入酱汁,慢慢搅拌,刚加水淀粉降至有点发白色,搅拌至透明感和浓稠后关火。
