鸡浮焖鱼翅

1、用料主料:水发金钩翅750g。配料:童鸡腿2只重250g,前夹肉末lOOg,蛋清3只,熟火腿12片120g,青菜心12棵。

2、调料:上汤1500g,姜汁50g,料酒50g,葱花5g,姜米5g,生粉15g,色拉油1000g(实耗50g),精盐5g,味精3g,鸡粉3g,胡椒粉1/5g。

3、鸡腿肉出骨刀排斩断筋,放盐2g、味精1g、撒胡椒粉,加料酒5g腌制,前夹肉末100g加盐2g、味精1g、水50g、葱花5g、姜米5g、料酒5g,撒胡椒粉,拌上劲,抹在鸡肉上,刀排斩至猪肉与鸡肉相溶,改成菱型坯子待用。

4、蛋清打发至筷子插入直立不倒时,加生粉15g拌均匀;起油锅,油温控制在1~2成,发蛋裹鸡浮坯成蚕茧形,在温油盅中焐熟待用。

5、菜心12棵,火腿用开水烫一虾,金钩翅加姜汁50g焯水;沙锅中依次排菜心,火腿片和鸡浮,金钩翅放中间;上汤1500g烧开,加料酒25g倒入沙锅中煲开,用小火煲80分钟,加盐、味精、鸡粉调味即上桌。
