纯肉腊肠制作方法

1、把精肉和肥肉按比例切成小块,用绞肉机绞成肉末,加入调料,用力搅拌均匀,制成肉馅,并稍加腌制。

2、腌制好后,用漏斗把肉馅灌入整理好的肠衣中,用针扎一些孔,排除肠中的空气,用麻绳打结扎成小段,放在阳光下曝晒至半干,悬挂在竹竿上,置于通风处晾挂,20天左右,取下进行蒸制。

3、将晒干的小香肠放入蒸锅内蒸制,大约30分钟后,取出冷却即可。
