清蒸鳝筒

1、主料:鳝鱼500克、冬笋100克、猪油(炼制)30克、大蒜(白皮)15克、料酒5克、酱油25克、盐4克、味精2克、白砂糖50克、大葱15克、姜8克。

2、将用击昏剔骨法宰杀的鳝鱼的鳝片肉洗净,沥去水;

3、鳝鱼放在案板上,用刀切成5厘米长的段,投入开水锅中焯烫一下,捞出后晾凉,把鱼筒整齐时摆入盘中;

4、冬笋洗净,切成长形片,码在盘中的鳝筒上面;

5、将锅架在火上,放入猪油,烧至七成热,放入蒜瓣,煸出香味;

6、然后连油一起浇在鱼筒上,再放上葱段、姜片、糖、味精、料酒、盐、酱油和适量鲜汤,上屉用旺火、沸水、足气蒸(以水开冒大气后计)15分钟左右,即可下屉上桌。
